Christmas Day might look a little bit different this year. Depending on when you are in the world you may be preparing for a much smaller gathering than usual, or avoiding travelling to see family.
But just because you’re planning a quieter Christmas this year doesn’t mean it has to be any less special (or delicious!).
I put together an easy menu, that will come together in a few hours with relatively little effort and fuss to give you that delicious traditional Christmas roast experience for two.
Feeding a few more mouths? Don’t worry! This menu is easily scaled to fit a few extra around the table so the more the merrier.
All the recipe options are listed below but I wanted to go through the order of events first and give a few tips and tricks to make things on the day even easier!
APPETISER
I don’t know about you but I get hangry pretty quickly when I’m waiting for a roast dinner to come together. I suggest an Easy Bruschetta to start the meal which can be made ahead (minus the grilled bread). The red and green is very festive and fitting, plus who doesn’t love bruschetta?! There’s also some cucumber bites and spinach and feta pinwheels to choose from if Bruschetta isn’t your thing! Want an even easier option? Buy a cheese or two, a dip and some crackers. Done!
MAIN DISH
Let’s just keep it simple here and make a roast chicken. It’s deliciously juicy and tender with crispy skin on the outside, and you can buy a smaller bird to suit two people.
Choose from my classic Roast Chicken with Lemon and Rosemary, Greek Roast Chicken or Air Fryer Whole Chicken.
You could also grab a small Christmas ham and carve that up to serve too for a second easy option.
SIDES - PICK 2 (or more)
I’ve put together a few side dishes that you can choose from ranging from classic crispy roast potatoes to a roast pumpkin, spinach and feta salad for a twist. Don’t forget the classics - some fresh bread rolls, peas and gravy.
DESSERT
After a huge meal often the last thing you want is a big dessert, so why not finish things off with an Oreo Cheesecake Ball (or two… or three). Want something a little more hearty? Try some apple turnovers, made either in the oven or the air fryer.
There’s also some shortbread cookies that would be great for a late night nibble.
You could also grab some mini pavlova meringues from the store and top them with whipped cream and chopped fruit!
