When the heat hits, all I want is cold and refreshing lemon popsicles! This sugar-free popsicles recipe is SO good and takes just 5 minutes and 4 ingredients. They satisfy those cold and fruity cravings in the best way – and they are healthy and low carb to boot! I’m pretty sure you’re going to love them. I’m not usually one to buy pre-packaged and processed food and snacks. Most of the time, they are filled with additives, preservatives, and added sugar. (Cough, cough… those neon popsicles!) These are definitely things I try to avoid, and when sugar free fruit popsicle recipes are so easy to make, it’s an easy swap. Keep my lemon blueberry popsicle recipe in your freezer at all times – then they are ready to go, whenever a dessert craving strikes. They’ll be waiting for you! I like to always have a stash in the freezer. Many fruit popsicles recipes are sweetened with sugar or juice, but not these! My homemade sugar free popsicle recipe is made with fresh berries, lemon juice, and coconut cream, with some (natural!) sweetener to sweeten it up. The combination is both sweet and tart, and very refreshing. Perfect for summer afternoons or evenings. Up until this point, my favorite homemade ice cream recipe has been vanilla low carb keto ice cream. The only downside is, my dairy-free readers can’t enjoy it. And even though my family is not dairy free, we probably consume more dairy than we could or should be. Finding dairy free alternatives for foods like ice cream – that actually taste good – is always a plus! I already use coconut milk and coconut cream in paleo recipes regularly, so a dairy-free dessert made with coconut cream fits right in. Enter these dairy-free low carb popsicles. Not only are they low carb, sugar-free, and dairy-free, but they are also gluten-free and nut-free, as well. Meaning just about everyone can enjoy them. I can’t wait for you to try them out.
How To Make Sugar-free Popsicles
These lemon popsicles with blueberries are probably one of the easiest sugar-free desserts you can make. It takes just a few minutes, a blender and a freezer.
Simply whirl some blueberries, lemon juice, coconut cream, and powdered sweetener together in a blender until smooth.
Try not to sample TOO much of this tasty mixture, ha! It’s pretty tempting, but it gets even better once it’s in popsicle form. 😉 TIP #1: Make sure to use powdered sweetener for the smoothest texture in your popsicles. TIP #2: You an start with less sweetener and adjust to taste. The amount you need can vary depending on your taste buds and how sweet your blueberries are!
Pour into popsicle molds, and freeze. That’s it, I told you it was easy.
They do take a little planning ahead, as they’ll need about four hours to freeze, but that’s the most intensive aspect of this sugar-free popsicles recipe. And that’s how it should be in the summer, don’t you think?
Do Sugar-Free Popsicles Have Carbs?
The carbs in popsicles will vary, depending on the recipe or brand. Store-bought sugar-free popsicles are usually pretty low carb, but they are artificially sweetened. Not to mention preservatives and artificial colors. No, thanks! It’s one of the reasons why I love to make homemade popsicles. Then I know exactly what’s going into them. My lemon popsicle recipe have just 6 grams of carbs – pretty good for a sweet treat that’s made with real fruit, don’t you think?
